Quinoa Vegetable Stir fry/Salad

Many of you already know quinoa is very high in protein and fiber. It is called world’s healthiest food or super food. Quinoa is a complete source of protein and also a good source of dietary fiber. Quinoa doesn’t have any taste of its own, so there are endless opportunity how you dress it.

My daughter makes wonderful Quinoa Vegetable stir fry with Indian spices. I was thinking of making salad to pack for lunch and I remember this stir fry. This is the first time I was preparing it. I was thinking of what kind of flavour I wanted to add. 1st I thought of adding Italian flavour like oregano. Then I thought why not make Chinese style quinoa stir fry with soy sauce. Finally I decided that I don’t want to make it spicy, I was looking for something simple with subtle flavour where I can taste the veggies instead of spices. The final dish was so delicious and flavourful. Here is how I made it

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Ingredients:

1/2 cup uncooked red or white quinoa
1 cup water
1 small zucchini cut lengthwise and cut in slices
1/2 cup each red and orange bell pepper cut in small slices. You can use any colour bell pepper
Oil for cooking
1 tsp cumin seeds
1/2 tsp grated ginger
Salt to taste
Small pinch of black pepper powder
1 tbsp lemon juice

Procedure

1. Bring 1/2 cup quinoa and 1 cup liquid to a boil in a medium saucepan. Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. Mine took around 10 minutes so check the quinoa in between. When ready, remove from the heat and fluff quinoa with a fork.cook-quinoa

2. Chop and prepare all the veggies. Heat a pan with 1 tbsp oil and add cumin seeds. In few seconds cumin seeds start to change the colour then add zucchini. Cook zucchini on medium heat for 2-3 minutes or until you see some cook marks on both side stirring frequently. Then add red and orange pepper slices, salt, grated ginger and cook on low for 2-3 minutes. When peppers are slightly cooked turn off the heat and then add cooked quinoa, black pepper powder and lemon juice as per your taste and mix well.cook-vegetables

3. Quinoa vegetable stir fry is now ready to serve. This stir fry is prepared without much effort, all the ingredients will be found in your pantry. It taste the best at room temperature. I packed it for my lunch and I can’t express how delicious it tasted! The ginger in the recipe adds wonderful fragrance and freshness to this stir fry. Ginger also helps in digestion. Serve it as a side dish with big meal or eat as a salad. So guys, taking salad for lunch is not as boring it sounds! You can prepare this during the weekend and pack your lunch box for the busy week.
