Curried Potato / Aloo Sabji

Hello Fellow Chefs,

Potato are so easy to find during anytime of the year or any place. It is such a versatile vegetable that you can boil, fry or saute. You can make appetizer to dessert using potato. They last long time in the pantry and cheapest vegetable compare to other. I always keep a big bag of potato in my house. I use it very widely in my recipes whether it be in aloo paratha, pakoda, ragda patties, sabudana cutlet, chatpate aloo and many more. My family loves anything made using potato 😛 :P.

About this curry, it is very simple but irresistible curry.  It only takes 10 minutes to prepare this delicious dish. It is served with fried poori in may restaurants in India. This recipe serves 3 people.

Preparation Time: 5 minutes

Cooking Time: 10 minutes

Ingredients:
3 potato, boiled and cut in cubes
Small piece of ginger grated
2 green chilies finely chopped
1 tbsp peanuts
5-7 curry leaves
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp coriander powder
1 tsp turmeric powder
1 tsp garam masala
1 tbsp lemon juice
Salt to taste
Oil for cooking

Procedure

1. In a pan, heat 2-3 tbsp oil on medium heat. Add cumin seeds, mustard seeds and peanuts. When the seeds start to pop, add curry leaves, chopped chilies  and grated ginger. Saute for 1 minutes on low heat. Then add turmeric powder and coriander powder. Continue to saute on low for another 30 seconds. Now add potato, and salt and mix well. Let it cook on low for 3-4 minutes until all the flavours start to blend together. Then add 1 tsp garam masala powder, mix well and let it cook on low for 1 more minute.

2. When it is ready garnish with chopped coriander leaves. Serve with roti and masala chaas on the side. This easy, mouth-watering recipe is a must-try!
