This is one of the most favourite food in my house. This is the most famous street food of India, which is loved by young and old. It is available in every street corner and no matter what time of the day, you will see people eating this. People prepare this dish with some variation in different region. Some add Garbanzo beans/chickpeas, sprouted beans but we like just with boiled mashed potato. You can keep everything ready and assemble at the last-minute before serving. You can serve it as an appetizer/starter for any party.
Preparation time: 20 minutes
Cooking Time: Varies if you prepare puri at home, just make few cuts with knife before frying so puris are not puffed. I am using ready-made puri to make this dish.
Puri – it is good to have flat puri or slightly puffed ones
2-3 potato boiled and mashed
1 onion chopped finely
1 big tomato chopped finely
Dates tamarind chutney
1 cup thin sev
Chopped coriander leaves and pomegranate seeds (optional) for garnishing
1. Prepare all the ingredients as mentioned above.
2. In a plate, spread 10-12 puri. Top with little mashed potato, onion and tomato. On the top, add green chutney, date tamarind chutney and garlic chutney. All chutney needs to be thined with little water before using it. Sprinkle slight salt on it. At the end, garnish with sev, chopped coriander leaves and pomegranate seeds.
3. Serve this spicy, sweet and savory dish immediately.
It is a crowd pleasure. It is also perfect for light supper. We love to eat it alone but you can serve as a side with Pani Puri. You can use flat puri from pani puri to make this dish.
