This recipe is so simple yet very delicious. I am using spaghetti squash to make this side dish which can be use as condiment with many dishes. During this time around we get many different kinds of squash. One of them is spaghetti squash. I decided to give it a try and we all really liked it. The pulp from the squash which looks like spaghetti, taste like rice noodles. We ate this salad with our main food as a side. It’s nutritious and those who are on gluten-free diet can eat as well. .
Preparation Time: 10 minutes
Cooking Time: 45 minutes
1 spaghetti squash
2 tbsp lemon juice
Salt to taste
Grated Parmesan for garnishing
1. Cut the squash lengthwise and remove seeds. Heat oven at 350°F. Bake squash cut side down for 10-12 minutes. Turn and bake till skin turns tender around 30-35 minutes. Remove it from oven and let it cool down so it is easy to handle. With fork, release spaghetti like strands of cooked squash.
2. In bowl with spaghetti, add lemon juice, black pepper powder, salt. Mix well. Garnish with grated Parmesan cheese.
This is a great side dish, enjoy with any main dish.
