Mango Kulfi/Ice Cream

Dear Friends,

It is the time of the year when mangoes are available everywhere. It is summer and need something to cool down. I have made this kulfi using only 3 ingredients, you heard it right….only 3 ingredients and no cooking. I am sure this will be the easiest kulfi/ice cream recipe. This recipe serves 7-8 people.

Preparation Time: 20 minutes

Cooking Time: 0 minutes

Ingredients:
500 gm mango pulp
473 ml whipping cream
1 ripe mango chopped in small pieces
4 tbsp icing sugar or as per your taste

Procedure:

1. Whip cold whipping cream in a cold bowl. Add icing sugar while whipping cream. It doesn’t need form stiff peaks, I whipped until cream was thick enough (10-12 minutes). Put the cream in fridge while you prepare other items.

2. Line bread pan with plastic wrap and keep extra plastic to wrap on top. It will make it easier to pull out kulfi from the pan.

3. Dice mango into tiny pieces. Mix mango pulp, mango pieces in whipped cream. Remember not to over mix, just fold the mixture slowly.

4. Pour the mixture in lined bread pan and cover with remaining plastic wrap. You can also make kulfi in small disposable paper glasses available in dollar store. Pour mixer in a glass, add ice cream stick. Remember to break stick 1/2 inch before the end and bend 90 degrees before adding the glass so it does not come out while eating kulfi.

5. When you are ready to serve, slice mango kulfi in 1/2 inch thick piece and garnish with barries of your choice. For glass kulfi, just tear the paper glass and kulfi is ready to serve. IMG_4949
