Zucchini and Radish leaves Sausage

Hello Friends,

This is very healthy and nutritious gluten free dish comes from state of Gujarat. Usually, we use wheat flour but I have replaced wheat flour with other flours to make it gluten free. This is also called muthia. This recipe serves 2-3 people.

Preparation Time: 15 minutes

Cooking Time: 45 minutes

Ingredients:

1/2 cup gram/chickpeas/besan flour
1/2 cup oat flour
1/2 cup corn flour
1/2 cup soybean flour
1 cup chopped radish leaves
2 zucchini grated
Big piece of jaggery
A pinch of asafoetida
1 tsp each of coriander powder, red chili powder and turmeric powder
2 tbsp olive oil
1/4 tsp baking soda/soda bicarb
1 tbsp lemon juice
Salt to taste

Procedure

1. In a bowl mix chopped reddish leaves, grated zucchini, jaggery, asafoetida, coriander powder, red chili powder, turmeric powder and salt. Keep this mixture on side for 10-15 minutes so zucchini will leave water.

2. In the same bowl, add all the flours, olive oil, soda bicarb and lemon juice on top of soda bicarb. You will see baking soda bubbling. Make a soft dough. Add little water only if needed.

3. Make sausage like rolls and arrange in a dish with holes or steaming tray.

4. Heat the water in a steamer or big pot and steam this muthia on medium to high for 1st 20 minutes and then low to medium for another 20-25 minutes.

5. Let muthia cool down for few minutes and enjoy with yogurt, tea or with pickle.

You can saute leftover muthia next day. In a pan, add mustard seeds and sesame seeds. When mustard seeds splutter, add muthia and cook until it is golden brown on all sides stirring in between.

Muthia can be eaten as breakfast or light supper. It is very healthy as it is steamed.
